"Quiet Night" Chamomile Cocktail

Instructions

For the Chamomile Honey Syrup:
  1. Add honey and water to a small saucepan over medium heat. Stir until the honey is fully dissolved (do not boil).
  2. Remove from heat, add the chamomile tea bags, and let steep for 10-15 minutes.
  3. Remove tea bags (squeezing them out) and let the syrup cool completely. Store in an airtight container in the fridge for up to 2 weeks.
For the Cocktail:
  1. Add gin, lemon juice, chamomile honey syrup, and egg white (if using) to a cocktail shaker *without* ice.
  2. Shake vigorously for 15 seconds. This is a "dry shake" and helps build foam from the egg white.
  3. Add a generous amount of ice to the shaker.
  4. Shake again, hard, for another 15-20 seconds until the shaker is very cold.
  5. Double-strain (using the shaker's built-in strainer and a fine-mesh strainer) into a chilled coupe or martini glass.
  6. Garnish with a lemon twist or a few dried chamomile flowers.
