Infuse: Pour 100 ml of the double cream into a small saucepan and heat gently until steaming (not boiling). Remove from the heat, add the Earl Grey tea leaves, and steep for 8 minutes. Strain through a fine sieve, pressing the leaves to extract maximum bergamot flavour, then chill the infused cream in the fridge for at least 30 minutes until cold.

Whip: In a large, chilled bowl, combine the remaining 200 ml cold double cream with the chilled Earl Grey–infused cream. Using a balloon whisk or electric beater, whisk vigorously until soft peaks form—this should take 3–4 minutes by hand, or 1–2 minutes with a beater. The cream should hold its shape but still look glossy, not grainy.

Fold: In a separate bowl, stir together the condensed milk, honey, vanilla extract and sea salt until smooth. Gently fold this mixture into the whipped cream using a silicone spatula, taking care not to knock out the air. The mixture should be pale, fluffy and evenly combined.

Freeze: Pour the mixture into a freezer-safe container (a 1-litre loaf tin works well). Smooth the top, cover with baking parchment and a lid, and freeze for at least 4 hours or until firm. For the best texture, let it sit at room temperature for 5 minutes before scooping. Store in the freezer for up to one month.
