🫖 Equipment You'll Need
A gooseneck kettle with precision temperature control is the cornerstone of successful gongfu brewing. Unlike a standard electric kettle, its narrow swan-neck spout delivers a gentle, controlled stream that won't bruise delicate oolong leaves, and built-in thermostat settings (ideally adjustable in 1°C increments) ensure you hit the sweet spot—90–95°C for Tie Guan Yin—every single time. Over- or under-temperature by just a few degrees and you'll either scorch the orchid notes or fail to coax them out at all.

Greener, lightly oxidised Tie Guan Yin thrives at 90–92°C; more heavily roasted or aged versions can handle 95–98°C and longer steeps. If your leaves are tightly rolled pellets, add an extra 10 seconds to the first infusion to allow full unfurling.
