Oolong Tea-Smoked Chicken Thighs with Honey Glaze

Jump to Recipe ↓

Tea-smoking is one of the most elegant ways to layer flavour onto poultry without a garden or a charcoal grill. This stovetop method uses loose-leaf oolong tea, brown sugar and a handful of rice to create gentle, aromatic smoke that infuses chicken thighs with a subtle sweetness and floral complexity. A stovetop smoker makes the process foolproof—no need to improvise with foil or worry about kitchen smoke alarms. The result is tender, mahogany-coloured chicken with a delicate smokiness that medium-oxidised oolong delivers beautifully.

Once smoked, the thighs are brushed with a sticky honey soy glaze and briefly roasted to caramelise the surface. The glaze balances the tea's floral notes with umami and sweetness, making this dish feel special enough for a weekend dinner party yet straightforward enough for a Tuesday night. Serve with steamed jasmine rice, pickled vegetables, or a simple cucumber salad. If you're curious about which teas work best with smoked and grilled foods, medium to dark oolongs are a brilliant starting point.

Instructions

1
Season: Pat the chicken thighs dry with kitchen paper and season both sides generously with sea salt, black pepper and the five-spice powder. Set aside at room temperature for 10 minutes.
2
Prepare smoker: Line the base of your stovetop smoker with foil for easy cleaning. Mix the oolong tea leaves, brown sugar and rice together, then scatter evenly across the smoker base. Place the drip tray and wire rack in position.
3
Smoke: Arrange the chicken thighs on the rack in a single layer, leaving a little space between each. Close the lid tightly. Set the stovetop smoker over medium-high heat. Once you see the first wisps of smoke escaping (about 2–3 minutes), reduce to medium-low and smoke for 20 minutes. Do not lift the lid during this time.
4
Make glaze: While the chicken smokes, whisk together the soy sauce, honey and sesame oil in a small bowl.
5
Glaze and roast: Preheat your oven to 200°C (180°C fan). Transfer the smoked thighs to a foil-lined baking tray. Brush generously with the glaze, then roast for 10–12 minutes until the glaze is sticky and caramelised, and the chicken reaches an internal temperature of 75°C.
6
Rest and serve: Let the chicken rest for 5 minutes, then slice thickly or serve whole. Drizzle over any remaining glaze and garnish with thinly sliced spring onion or sesame seeds if you like.

🫖 Equipment You'll Need

A stovetop smoker is a compact, lidded pan with an integrated rack and drip tray, designed to smoke food indoors without setting off alarms or leaving your kitchen smelling like a bonfire. For tea-smoking, it creates a sealed environment that traps delicate oolong aromatics around the chicken, giving you consistent, gentle smoke and beautifully even colour—far tidier and more reliable than the traditional wok-and-foil method.

Expert Tip: Don't Lift the Lid

Resist the urge to peek during smoking. Each time you lift the lid, you release precious aromatic smoke and drop the internal temperature, which means longer cooking and less flavour. Trust the process—20 minutes of steady, low heat is all you need.
