  • 4 large egg whites (at room temperature)
  • 200 g caster sugar
  • 1 tsp cornflour
  • 1 tsp white wine vinegar
  • 1½ tbsp jasmine tea leaves (loose-leaf jasmine green tea or jasmine pearls), finely ground
  • 300 ml double cream
  • 250 g fresh strawberries, hulled and halved
  • 1 tbsp icing sugar (optional, for sweetening cream)

Instructions

Prepare: Preheat your oven to 140°C (120°C fan)/275°F/gas 1. Line a large baking tray with baking parchment. Grind the loose-leaf jasmine tea to a fine powder using a spice grinder or pestle and mortar, then sift to remove any larger pieces.

Whisk egg whites: Place the egg whites in the bowl of your stand mixer fitted with the whisk attachment. Whisk on medium speed until soft peaks form, then increase to medium-high. With the motor running, add the caster sugar one tablespoon at a time, allowing each addition to be fully incorporated before adding the next. Continue whisking for 6–8 minutes until the meringue is thick, glossy, and holds stiff peaks.

Fold in flavourings: Sift the cornflour and ground jasmine tea over the meringue, then drizzle in the vinegar. Use a large metal spoon or spatula to fold gently until just combined—don't over-mix or you'll deflate the structure.

Shape & bake: Spoon the meringue onto the prepared tray in six equal mounds, using the back of the spoon to create a shallow well in the centre of each nest. Bake for 1 hour 30 minutes, then turn off the oven and leave the pavlovas inside to cool completely (at least 2 hours, or overnight). They should lift easily off the parchment when ready.

Whip cream: When ready to serve, whip the double cream (with icing sugar, if using) to soft peaks. Spoon the cream into the centre of each pavlova nest.

Top & serve: Arrange the halved strawberries over the cream and serve immediately. The pavlovas are best enjoyed on the day of assembly, though the unfilled meringues will keep in an airtight tin for up to three days.
