Whipped Honeybush & Vanilla Bean Mousse

Jump to Recipe ↓

This naturally sweet, cloud-like mousse showcases the honeyed, floral notes of honeybush tea—South Africa's answer to rooibos. We infuse double cream with loose-leaf honeybush and a whole vanilla bean, then whip it to stiff peaks with an electric whisk before folding through glossy meringue. The result is a no-gelatine mousse with a mousse-light texture and a gentle, naturally sweet flavour that needs almost no added sugar.

Because you're whipping cream to very stiff peaks and whisking egg whites to a stable meringue, a reliable electric whisk is essential here—it gives you the control and power to achieve the volume and structure that make this mousse so airy. Instructions

1
Infuse: In a small saucepan, combine the double cream, honeybush tea, vanilla bean pod and seeds. Heat gently over low heat until it just begins to steam (do not boil). Remove from heat, cover, and steep for 15 minutes. Strain through a fine-mesh sieve into a bowl, pressing the tea to extract maximum flavour. Chill the infused cream in the fridge for at least 2 hours, or until very cold.
2
Whip cream: Using an electric whisk, beat the chilled infused cream on medium-high speed until it holds stiff peaks—this will take 2–3 minutes. Be careful not to over-whip or it will split. Transfer to a large bowl and set aside.
3
Make meringue: Wash and dry your whisk beaters thoroughly. In a clean, grease-free bowl, whisk the egg whites and salt on medium speed until foamy, then increase to high and whisk until soft peaks form. Gradually add the caster sugar, a tablespoon at a time, whisking continuously until you have a glossy, stiff meringue.
4
Fold: Gently fold one-third of the meringue into the whipped cream to loosen, then fold in the remaining meringue in two additions, using a large metal spoon or spatula. Use a light hand to keep the mousse airy.
5
Chill & serve: Spoon the mousse into four serving glasses or ramekins. Cover and refrigerate for at least 1½ hours, or until set. Serve chilled, topped with honeycomb shards or edible flowers if you like.

🫖 Equipment You'll Need

A good electric whisk is non-negotiable for this recipe. You need consistent, high-speed power to whip cold infused cream to stiff peaks and build a stable meringue—tasks that would take ages by hand and risk under-whipping. Look for a model with variable speeds and sturdy beaters that won't buckle under thick cream.

Expert Tip: Keep Everything Cold

For the fluffiest mousse, chill your mixing bowl and whisk beaters in the freezer for 10 minutes before whipping the infused cream. Cold equipment helps the cream reach stiff peaks faster and with more volume.
