Instructions

Brew: Pour 200 ml boiling water over the Earl Grey tea and steep for 5 minutes. Strain, stir in 60 g caster sugar until dissolved, and set aside to cool. This syrup will carry the bergamot flavour through the sponge.

Make Custard: Heat the milk and vanilla pod in a saucepan until steaming (do not boil). In a bowl, whisk the egg yolks, 80 g caster sugar, and cornflour until smooth. Gradually pour in the hot milk, whisking constantly. Return to the pan and cook over medium heat, stirring continuously, until thickened (2–3 minutes). Strain into a bowl, cover the surface with cling film, and cool to room temperature, then chill for at least 1 hour.

Whip Cream: Whip the cold double cream to soft peaks. Gently fold two-thirds of it into the chilled custard to create the crème diplomat. Reserve the remaining cream for topping.

Assemble: Cut the sponge into 2 cm cubes. Arrange half in the base of your trifle bowl, then brush generously with the Earl Grey syrup (don't drench—just moisten). Spoon over half the crème diplomat, smoothing gently. Scatter over half the berries. Repeat with a second layer of sponge, syrup, diplomat, and berries.
