Soft, chewy, and vibrant green. The earthy bitterness of matcha pairs perfectly with sweet white chocolate chunks in this easy cookie recipe.

These aren't dry, cakey cookies. By using melted butter and chilling the dough, we create a dense, fudgy texture similar to a brownie, with a beautiful crinkle top.

Instructions

1
Dry Mix: In a medium bowl, whisk together the flour, matcha powder, baking soda, and salt until uniform green.
2
Wet Mix: In a larger bowl, mix the melted butter, brown sugar, and white sugar until smooth. Beat in the egg and vanilla extract (optional).
3
Combine: Pour the dry ingredients into the wet ingredients. Mix until just combined. Fold in the white chocolate chips.
4
Chill: Cover the bowl and refrigerate for 20-30 minutes. This prevents the cookies from spreading too thin.
5
Bake: Scoop balls onto a lined baking sheet. Bake at 350°F (175°C) for 9-11 minutes. They will look undercooked—that's okay! They firm up as they cool.

Expert Tip: Vibrant Green Color

To keep your cookies bright green instead of brownish, don't let them brown in the oven! Pull them out the second the edges are set. Also, ensure you use 100% pure matcha, not a "matcha latte mix" which has sugar and milk powder.
