Moroccan Mint Tea Ceremony

Jump to Recipe ↓

This Moroccan mint tea ceremony brings together the crisp, smoky notes of gunpowder green tea with the bright freshness of mint, sweetened generously and poured from a height into decorated glasses. Unlike the stillness of the Japanese tea ceremony or the precision of the Chinese gongfu ritual, the Maghrebi tradition is convivial and generous, a symbol of hospitality served throughout the day. A proper Moroccan tea pot with its long, curved spout is essential—it allows you to pour from height, aerating the tea and creating the signature foam that crowns each glass.

The ritual itself is as important as the ingredients. The tea is brewed strong, sweetened with sugar (not honey), and steeped with whole sprigs of fresh mint—spearmint is traditional, though any robust garden mint works well. The high pour, performed with a steady hand, not only cools the tea slightly but also introduces oxygen, mellowing the tannins and bringing out a silky mouthfeel. For UK home cooks, this is a wonderfully aromatic, caffeine-gentle alternative to afternoon tea, and it scales beautifully for guests.

Instructions

1
Rinse the Tea: Place the gunpowder green tea in your Moroccan tea pot. Pour in about 100 ml boiling water, swirl gently for 5 seconds, then discard the water through the spout. This rinses away any dust and begins to open the leaves.
2
Add Mint & Sugar: Add the fresh mint sprigs (stalks and all) and the sugar to the pot. Pour in the remaining 700 ml boiling water. Stir gently with a long spoon to dissolve the sugar.
3
Steep: Cover the pot and let the tea steep for 5–7 minutes. The longer you steep, the stronger and more tannic the brew—traditionally, Moroccan mint tea is bold and sweet, not delicate.
4
Test & Adjust: Pour a small glass, taste, and adjust sweetness if needed. The tea should be aromatic, sweet, and refreshing, with a balance between the mint's brightness and the tea's gentle astringency.
5
Pour from Height: Hold the Moroccan tea pot high above the glass—at least 30 cm—and pour in a steady stream. This aerates the tea and creates a frothy crown. Pour back into the pot and repeat once or twice to ensure even mixing and maximum foam.
6
Serve: Pour into small decorated glasses, holding the pot high for each glass. Garnish with a fresh mint sprig if you like. Serve immediately while hot, ideally with dates, almond pastries, or other North African sweets.

🫖 Equipment You'll Need

A Moroccan tea pot—usually stainless steel or brass with a long, curved spout and domed lid—is the key to authentic mint tea service. The elongated spout allows you to pour from a dramatic height without splashing, aerating the tea to create the signature frothy top and silky texture that defines traditional Maghrebi hospitality. While you can use a regular teapot, the high pour won't be as controlled, and you'll miss the theatre and the improved mouthfeel that proper aeration brings.

Expert Tip: Reuse the Leaves

In Morocco, the same pot of tea is often served in three rounds, with fresh mint and sugar added each time. The first pour is said to be strong as life, the second sweet as love, and the third gentle as death. Don't be afraid to top up the pot and steep again for a lighter, mellower second or third service.
