Why Temperature Matters

Water temperature significantly affects extraction rate and flavour profile. Delicate teas like green and white require lower temperatures to prevent bitterness from excessive tannin release. Robust teas like black and pu-erh can handle boiling water to fully extract their complex flavours. When in doubt, err on the side of cooler water—you can always steep longer, but you can't undo over-extraction.
