Sift: Sift the matcha powder through a small sieve into a bowl. This is the only way to guarantee zero lumps.

Whisk Paste: Add just a splash of the hot water and the sweetener. Whisk vigorously (ideally with a bamboo chasen or electric frother) to form a smooth, dark green paste.

Thin: Add the rest of the hot water and whisk again until frothy on top.

Layer: Fill a glass with ice and your milk. Pour the green matcha mixture slowly over the ice to create a beautiful layered effect. Stir before drinking.
Expert Tip: No Bamboo Whisk?
If you don't have a traditional bamboo whisk (chasen), use a handheld electric milk frother. If you don't have that either, put the matcha, water, and ice in a cocktail shaker and shake it like crazy. It works perfectly!
