Matcha Mille-Feuille

Jump to Recipe ↓

This matcha mille-feuille brings together everything we love about classic French patisserie and the earthy elegance of Japanese matcha. Three layers of crisp, golden puff pastry—docked with a pastry docker to keep them flat and even—are sandwiched with silky matcha pastry cream and finished with a glossy white chocolate glaze. It's a show-stopping dessert that looks intricate but is surprisingly achievable at home.

The secret to perfect puff pastry layers is a good pastry docker: those rows of small spikes prick hundreds of tiny holes across the dough, releasing steam as it bakes and preventing the uneven puffing that can ruin a mille-feuille. You'll use it before baking to ensure your pastry stays crisp, flat and stackable. The matcha pastry cream is lightly sweetened to balance the buttery pastry, and the white chocolate glaze adds just a hint of sweetness without overwhelming the green tea flavour.

Instructions

1
Prepare pastry: Roll the puff pastry out on a lightly floured surface to about 3 mm thick. Using a pastry docker, roll firmly across the entire sheet to prick evenly spaced holes—this prevents the pastry puffing unevenly and keeps your layers flat. Cut into 18 rectangles (roughly 10 × 5 cm). Transfer to two lined baking sheets, cover with baking parchment and place another baking tray on top to weigh down.
2
Bake: Bake at 200°C (180°C fan) for 20–25 minutes until golden and crisp. Remove the top tray and parchment for the final 5 minutes if needed for extra colour. Cool completely on a wire rack.
3
Make matcha cream: Whisk the egg yolks, sugar and cornflour in a bowl. Heat the milk in a saucepan until steaming. Pour half the hot milk over the yolk mixture, whisking constantly, then return everything to the pan. Cook over medium heat, stirring, until thickened (2–3 minutes). Remove from heat, sift in the matcha powder and whisk until smooth. Stir in the vanilla. Transfer to a bowl, cover with cling film touching the surface, and chill for at least 1 hour.
4
Melt chocolate: Melt the white chocolate in a heatproof bowl over simmering water (or in 20-second bursts in the microwave), stirring until smooth. Set aside to cool slightly but remain pourable.
5
Assemble: Choose the 6 neatest pastry rectangles for the tops and spread each with a thin layer of white chocolate glaze; set aside to set. For each mille-feuille, spread matcha cream over one pastry rectangle, top with a second rectangle and more cream, then finish with a glazed rectangle on top.
6
Serve: Dust lightly with icing sugar and serve immediately, or chill for up to 2 hours. The pastry is at its crispest within a few hours of assembly.

🫖 Equipment You'll Need

A pastry docker is essential for mille-feuille: without it, your puff pastry will puff unevenly into tall, fragile domes instead of crisp, stackable layers. The docker's rows of spikes prick hundreds of tiny holes across the dough, releasing steam as it bakes and ensuring your pastry stays flat, golden and professional-looking. It's the difference between a wobbling tower and a patisserie-perfect finish.

Expert Tip: Prevent Soggy Pastry

Assemble your mille-feuille no more than 2–3 hours before serving. The moisture from the matcha cream will gradually soften even the crispest pastry. For advance prep, bake and cool the pastry layers, make the cream, and store separately in the fridge—then assemble just before serving.
