Gongfu Oolong Ice Spheres

Jump to Recipe ↓

These Gongfu Oolong Ice Spheres turn a traditional gongfu brewing session into the most elegant iced tea service you'll pour all summer. By brewing high-quality oolong tea at full gongfu concentration, filtering it to crystal clarity, then freezing the liquor in ice sphere moulds, you create slow-melting, flavour-packed spheres that chill your glass without watering down the drink. It's a technique borrowed from high-end cocktail bars, now paired with Taiwanese high-mountain oolong or a floral Oriental Beauty.

The result is stunning: a single translucent amber or jade sphere sits in your glass, releasing waves of orchid, stone-fruit, or roasted honey as it slowly melts. Perfect for summer garden parties or an everyday treat that feels special, these spheres also solve the classic iced-tea dilution problem—you're sipping pure oolong, start to finish.

Instructions

1
Brew Gongfu-Style: Rinse your oolong leaves with a quick splash of hot water, then discard. Add 350 ml filtered water at ~95°C to your gaiwan or small teapot. Steep for 2–3 minutes (longer than a typical gongfu flash steep, because you want concentrated, full-bodied liquor). Strain into a heatproof jug.
2
Filter for Clarity: Pour the hot tea through a fine-mesh sieve lined with muslin or a coffee filter into a clean jug. This step removes all sediment and fine particles, ensuring your spheres freeze crystal-clear. Let the liquor cool to room temperature, then refrigerate until completely cold (about 1 hour).
3
Fill the Moulds: Pour the chilled, filtered oolong tea into your ice sphere moulds, leaving 2–3 mm headroom for expansion. If using a flower decoration, carefully position one blossom in each mould before sealing. Tap gently on the counter to release any air bubbles.
4
Freeze Overnight: Seal the moulds and place them on a level shelf in your freezer. Freeze for at least 12 hours—preferably 24—to ensure the spheres are solid and perfectly clear. (Slow freezing in a chest freezer yields the clearest results; a standard domestic freezer works fine but may have tiny trapped bubbles.)
5
Demould & Serve: Run warm water over the outside of each mould for 5–10 seconds, then gently twist or peel to release the sphere. Drop one sphere into a tall glass and pour over cold still water, cold-brew oolong, or even sparkling water. Watch it melt slowly, releasing concentrated oolong flavour as it goes.

🫖 Equipment You'll Need

A good-quality ice sphere mould—silicone or hinged two-piece plastic—is essential for this recipe because it produces large, slow-melting spheres that chill your drink elegantly without the rapid dilution of crushed or cube ice. Look for moulds that seal tightly to prevent leaks and measure 6–7 cm in diameter; smaller moulds melt too fast, losing the luxury effect. Expert Tip: Choose Light- to Medium-Oxidised Oolongs

Heavily roasted or dark oolong teas can taste bitter or astringent when frozen and melted slowly. Stick to high-mountain, Bao Zhong, Jin Xuan (Milk Oolong), or Oriental Beauty for the best cold flavour: floral, fruity, and naturally sweet with minimal tannin bite.
