Ingredients

The Cocktail
  • 2 oz (60ml) Gin (a floral one like The Botanist is nice)
  • 3/4 oz (22ml) Fresh lemon juice
  • 3/4 oz (22ml) Chamomile honey syrup (see below)
  • 1 Egg white (optional, for foam)
  • Garnish: Lemon twist or dried chamomile flowers

The Chamomile Honey Syrup
  • 1/2 cup Honey
  • 1/2 cup Water
  • 2 Chamomile tea bags (or 1 tbsp loose)

Instructions

Make the Syrup: Add honey and water to a small saucepan over medium heat. Stir until dissolved (do not boil). Remove from heat, add tea bags, and steep for 10-15 minutes. Cool completely. Store leftover syrup in an airtight container.

Combine Ingredients: Add gin, lemon juice, chamomile honey syrup, and egg white (if using) to a cocktail shaker without ice.

The Dry Shake: Shake vigorously for 15 seconds. This helps build foam from the egg white before the ice dilutes it.

The Wet Shake: Add a generous amount of ice to the shaker. Shake again, hard, for 15-20 seconds until the shaker is very cold.

Strain & Serve: Double-strain (use a fine-mesh strainer) into a chilled coupe glass. Garnish with a lemon twist.

Why shake without ice first? The egg white needs agitation at a warmer temperature to allow its proteins to unwind and trap air, creating a rich, silky foam. Shaking with ice immediately chills the proteins too fast, preventing the foam from forming.
