While milk teas get all the attention, "Fruit Teas" are the unsung heroes of the Bubble Tea world. Mango Green Tea is perhaps the most popular—a perfect balance of tropical sweetness and floral astringency.

Most shops use artificial syrup, but making it at home allows you to use fresh mango puree. The natural fiber of the fruit adds a luscious texture that syrup can never replicate, and pairing it with Jasmine Green Tea elevates the aroma to something sophisticated.

Instructions

1
Brew the Tea: Steep 2 tsp of Jasmine Green Tea loose leaf (or 2 bags) in 2 cups of hot water (80°C) for 3 minutes. Remove leaves and chill in the fridge. Do not over-steep or it will turn bitter.
2
Make the Puree: Peel and dice the mango. Place it in a blender with the lime juice and sweetener. Blend until completely smooth. If it's too thick, add a splash of water or tea.
3
Shake It: Combine the chilled green tea and the mango puree in a cocktail shaker (or a jar with a lid). Add a handful of ice. Shake vigorously for 10 seconds to aerate and mix.
4
Serve: Place your toppings (like aloe vera) at the bottom of a tall glass. Fill with ice. Pour the frothy mango tea over the top. Garnish with a mint sprig if feeling fancy.

Expert Tip: Why Lime?

Don't skip the lime juice. Mango is very sweet and creamy, while Green Tea is earthy. The acidity of the lime acts as a bridge, brightening the mango flavor and preventing the drink from tasting "flat" or overly sugary.
